Weight Watchers Crockpot Red Beans and Rice

I wanted to share this oh, so easy recipe with you all. It is only 2 WW points plus for a one cup serving!!!! If you add a cup of brown rice, that adds 3 more points. Still, it is really filling and very easy. Forgive me - I don't remember where I got the recipe, so I can't give any credit to anyone on this post.

1 lb. dried red beans, rinsed
7 cups water
1 whole green bell pepper, chopped
1 whole onion, chopped
3 stalks celery, chopped
3 cloves garlic, chopped
14 oz turkey smoked sausage, sliced
3 Tbsp Tony Chachere's seasoning


Place all ingredients in a crock pot and cook for 7 hours on low. This is pretty spicy, so if you don't like so much spice, you can decrease the amount of seasoning by about half.  Easy, easy, easy... Add to that a little microwavable brown rice, and you have a meal that required very little prep time. I cooked two different versions - one with full seasoning and one without any for Jake, hence the little crockpot :)
